“Development of methods for preparation of Oenococcus oeni strains used in
malolactic fermentation."(July 2010 - June 2011). Investment: € 32,475.21.
From samples collected on Retuerta Abbey installations (vineyards, wineries), Biomar Microbial Technologies isolated, cultured and identified several strains of a microorganism, Oenococcus oeni, with potential to generate a controlled malolactic fermentation and with obvious improvements in fermentation times.
From this very project, collaboration with Retuerta Abbey Wineries continued fluidly and, during 2012 vintage, Biomar Microbial Technologies (through its production plant) provided the amount of initiator necessary for fermentation tests in 15,000 liters, being its implementation a total success.
